I abhor watching myself bin leftover ingredients UNLESS it has turned rotten or inedible, so it’s highly normal of me to dig out old or make new easy-to-cook recipes during my weekly clean-out-the-fridge day.

So what did I do with leftover minced beef and half (Waitrose) packet of Fusilli?
Fusilli in Beef Bolognese Sauce!

Minced beef
1 small/ medium onion, diced/ chopped
1 bottle or 6 tablespoons of tomato pasta sauce (I use Barilla brand)
flat-leaf parsley for garnish
2 tabelspoons of vegetable stock liquid (option)
1 medium tomato, seeded and diced.
1 tablespoon olive oil
1/2 packet of fusilli pasta (follow packet’s cooking instructions)
2 tablespoons parmesan cheese (grated or roughly chopped)
Ground black pepper to taste


1. Bring deep skillet to medium heat, add 1/2 tablespoon of oil and fry onion for one minute. Set aside.

2. Once fusilli is ready, drain and return to large pot.

3. Add remaining oil (in the same skillet) and minced beef, stir until cook through. Add in vegetable stock, onions and diced tomatoes. Mix well for 1-2 minutes. Spoon in pasta sauce, stir and cook for 3-4 minutes until bubbling hot.

4. Combine beef bolognese in the large pasta pot, mix, serve and topped with parmesan.

Note: Serves 2-3

It only takes about 15-20mins of your cooking time – excluding washing up – and lunch is ready!
